Giving banana bread a run for its money.
This bread is so moist. Sorry if you don't like that word but it is the best compliment for a loaf. The juicy, grated apples perfectly compliment the chunks of chocolate. This loaf is full of wholesome ingredients and sweetened with maple syrup.
I always love baking with apple sauce because it's a great way to add fiber, liquid and volume without excess oil. Plus, since its the only time I buy apple sauce, it is a treat having it in the the fridge.
This bread is great warm but I almost prefer it chilled. Try for yourself and be the judge. This one is sure to be a crowd-pleaser.
1 1/2 cups oat flour
1 tsp cinnamon
1/2 tsp nutmeg
2 Tbsp ground flax and pumpkin
1 tsp baking soda
1 tsp baking powder
1/2 cup applesauce
2 Tbsp nut butter
1/2 cup almond milk
1/4 cup maple syrup
1 tsp vanilla
2 apples, grated
Preheat oven to 350°F.
In a mixing bowl, combine oat flour, cinnamon, nutmeg, baking soda, baking powder and ground seeds.
In another bowl, combine applesauce, nut butter, almond milk, maple syrup and vanilla.
Pour the wet mixture into the dry mix.
Fold in apples and chocolate chips.
Bake for 45 minutes or until slightly golden with a clean toothpick.
Cool completely before slicing.
Store in the refrigerator.
