Bursting with refreshing and zesty flavor.
I am not one to toot my own horn but these may be one of the best things I've made. The consistency is spot on - think somewhere in between a chewy date and a cake pop. The flavor is out of this world. The glaze is literally icing on top.
I combined ingredients that are not only tasty, but also good for you. Dates are perfect for sweetness and fiber. Walnuts are brain food. The protein powder is as clean as they come. The Real Sport flavor is specifically designed to boost recovery post-workout.
Truffle Ingredients
8 medjool dates, pitted
1 cup walnuts
3 Tbsp lemon juice
1 - 2 Tbsp lemon zest
2 Tbsp poppy seeds
3 scoops Epic Protein Real Sport
Glaze Ingredients
2 heaping Tbsp coconut oil
2 Tbsp lemon juice
A couple splashes of almond milk
1 Tbsp maple syrup
1 Tbsp lemon zest
Recipe
Add the dates to a food processor and blend to a paste.
Add in all the other ingredients, mix and scrape edges as needed.
Form truffles of desired size.
Place truffles in the freezer while you make the glaze.
Make the glaze, add more maple syrup if you would like it sweeter.
Take truffles out of freezer and coat them in the glaze. I did two layers.
Place glazed truffles back in the freezer for a half hour to set.
Enjoy and store in fridge.
