Protein Pancakes

There is just something about a pancake breakfast that sets the tone for the day

HOPPY Easter. These pancakes can be made into lots of fun shapes. My grandpa used to write our names using pancake mix, it was seriously impressive! These pancakes are packed with protein and will fuel you for whatever festivities are to follow.
If you want to make this recipe into waffles (I feel you, I LOVE waffles), simply add in 1 Tbsp or so of melted coconut oil.
Pro tip: pancakes make a great snack. Store extras in the fridge and heat up (or eat cold) when you need a snack.

Ingredients
3 cups oat flour
1 tsp cinnamon
3 tsp baking powder
1/2 cup pea protein (Use code CACAO20 for 20% off)
Juice from 1/2 lemon
1 3/4 cup + 2 Tbsp milk (I used oat milk)
1 ripe banana
Toppings
strawberries
blueberries
raisins
apple

If you are making oat flour, simply blend oats into a flour.
In a mixing bowl, combine oat flour, cinnamon, baking powder and protein.
In a blender, blend banana, plant milk and lemon juice.
Add the liquid mixture to dry mix.
Mix well until incorporated. This batter should be thick!
Makes 3-4 servings!
