Choco Beet Bars
These are melt-in-your-mouth delicious.

What is better than a chocolate no-bake treat? A chocolate no-bake treat with hidden veggies! The sweet potato is the perfect binding agent and the beets add a subtle flavor and a whole lot of color (and nutritional benefits).
Enjoy them frozen or warmed up, they are both so good. They are soft and chewy, just how I like my brownies. The crunch of the chocolate chips on top is an added surprise!


Ingredients
1 1/2 cup beet granola (use code CFC20 for 20% off)
1 Tbsp coconut oil
1 Tbsp almond butter
1 1/2 cup steamed sweet potato (I used Japanese sweet potato, peeled)
Recipe
Peel and steam potato until soft.
In a food processor, add granola, coconut oil and almond butter.
Add in potato and mix until dough forms a ball.
Add in chocolate chips (they will melt in if potato is warm!)
Line a baking dish with parchment paper and evenly distribute. Top with chocolate chips.
Store in fridge overnight!
Slice and enjoy!
