Coconut Mango Ceviche

Major vacation vibes right in your kitchen.

I know its (coco)nuts but there is nothing fishy about this ceviche! It does have all the refreshing features and should be enjoyed the same way. The coconut takes the place of fish and is absolutely delicious. I added mango here as well so you can skip the mango salsa. All you need are some chips, a cold beverage and a vacation state of mind.

 
 

Ingredients

  • 1 1/2 cup cubed coconut meat

  • 1/2 cup grape tomatoes

  • 1/2 cup cucumber

  • 1/4 cup green onion

  • 1 tbsp orange juice

  • 1 tbsp lime juice

  • 1/4 cup parsley

  • 1/4 cup cilantro

  • 1/2 avocado

  • 1/2 cup mango

  • pink salt to taste

  • pinch of cayenne pepper

Recipe

  1. Let coconut meat thaw before cutting into small pieces.

  2. In a mixing bowl, combine coconut meat with orange and lime juice.

  3. Chop up tomatoes, cucumber and green onion. Mix in with coconut.

  4. Finely chop cilantro and parsley and add to mix. Add in salt and cayenne

  5. Lastly, add in small pieces of mango and avocado. Mix carefully so they don't get squished.

  6. Serve right away with tortillas or tortilla chips
