Crunchy Matcha Granola

A very functional way to start the day.



Granola is one of those things that always intimidated me to make. I actually only made it for the first time in the last year. It turns out that it's incredible simple, highly customizable and so much better than anything you'd find in a bag.


You can make it with just oats and a few other ingredients, or load it up with nuts, seeds and superfoods! I am a matchaholic so matcha granola seemed fitting.


 


 

Ingredients

  • 1 cup oats (gluten-free if needed)

  • 1/4 cup unsalted pumpkin seeds

  • 1/4 cup unsweetened coconut shred

  • 1/2 cup pecans

  • 1/3 cup nut butter (I used almond butter)

  • 1/4 cup maple syrup

  • 2 tsp matcha

Recipe

  1. Preheat oven to 250°F.

  2. In a bowl, combine oats, pumpkin seeds, coconut and pecans.

  3. In another bowl, combine nut butter, maple syrup and coconut oil.

  4. Pour the liquid mixture into the oat mix.

  5. Mix in the matcha so it evenly coats the granola.

  6. Line a baking sheet with parchment paper and distribute evenly. You can choose to bake it in clusters or spread out for more of a cereal.

  7. Bake for 25 minutes or until its slightly golden.

  8. Let the granola cool, it will crisp up. Store in an airtight container.

  9. Enjoy with plant milk, on yogurt or as a snack.
