No-Bake Double Chocolate Cookie

Packed with all the good stuff.

Chocolate with chocolate. You can never go wrong. If you're experimenting in the kitchen, no bake is a great place to start. Once you get the batter to the consistency you'd like, you've done it! With any recipe-creation, I always suggest using a food processor or a single bow. That way you can see what you have and add more liquid/more dry ingredients until it is just right. Don't be afraid to get your hands (and kitchen) a little messy!




  • 1 cup medjool dates, pitted

  • 1 cup raw walnuts

  • your favorite chocolate bar (I used 2/3 of a Beauty Bar)

  • 1/4 cup ground flaxseed

  • 2 Tbsp cacao powder

  • Toppings: crushed chocolate bar, coconut shreds, etc.


  1. Pit and soak dates to soften.

  2. In a food processor, add dates and blend to a paste.

  3. Add in walnuts, chocolate, flaxseed and cacao.

  4. Roll into equal sized balls and flatten into cookies.

  5. Roll in coconut shreds and crushed chocolate.

  6. Set in freezer before enjoying.

  7. Store in the refrigerator in an airtight container.
