Rainbow Crunch Salad

I had a similar salad for dinner last night at Erewhon and had to re-create!

I believe Erewhon called this the Tibetan Super Salad (I could be wrong) and it is delicious. This was in their cold salad case and the leafy greens, along with toppings, had been marinating in the tangy dressing. I couldn't get it out of my head so I figured I should just make it myself. I added avocado because healthy fats are always a good idea.

This salad is crunchy, tangy and super satisfying. Add your protein to turn this side into a meal. It would also be great as a wrap or with some sort of grain. The possibilities are endless. All I know is that I will be making a huge batch of this to have on hand!


Salad Ingredients

  • Baby spring mix

  • Carrots, grated

  • Goji berries

  • Raisins

  • Pumpkin seeds

  • Sunflower seeds

  • Avocado

Dressing Ingredients

  • 1 Tbsp extra virgin olive oil

  • 1 Tbsp orange juice

  • 1/2 Tbsp rice vinegar

  • 1 tsp balsamic

  • 1/2 tsp pink salt

  • 1/2 tsp pepper

  • 1/2 tsp turmeric powder


  1. Soak raisins and goji berries in water to plump up and soften.

  2. Make your dressing by whisking everything together.

  3. Build your salad: greens, carrots, seeds, goji berries, raisins, avocado and dressing!

  4. Enjoy
