Banana Almond Loaf

Got spotty bananas?

Banana bread is a staple. It really brings me back to the Tiger King period of quarantine. I love baking with green banana flour. It is a great source of resistant starch and is gut-friendly. It has a smooth texture and a very subtle flavor.
Nut or seed butters are a great addition to any baked good. Sesame butter is more neutral than an almond or peanut butter. The balance super powder has cacao in it, along with sacha inch, turmeric and reishi.
The almond slices are the perfect contrast. They add a slight crunch and some nice texture. The add-ins are completely optional. There are so many different combinations.

Ingredients
2 spotty bananas + more for topping
1/4 cup sesame butter
2 flax eggs (2 Tbsp ground flax, 5 Tbsp water)
2 tsp balance super powder
2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
1/2 cup green banana flour
1 Tbsp date syrup (use CACAO15)
handful of sliced almonds (or chocolate chips, walnuts, etc.)
Recipe
Make flax egg, set aside.
Preheat oven to 350°F.
In a mixing bowl, mash banana.
Add in the nut butter and other liquid ingredients.
Add in the dry ingredients and mix well.
Fold in almonds at the end.
Line a baking dish with parchment paper and pour in mix. Top with banana.
Bake for 25 minutes.
Cool and enjoy. Store in the refrigerator!
