Chocolate Chip Coconut Banana Muffins

I can’t throw spotty bananas away, I just can’t do it.

You never need to throw away a banana again. Good for our planet and good for your soul!


Banana bread is great but personal banana bread muffins may be even better! I added in a generous handful of chocolate chips and coconut shreds for some extra goodness.⁣

Ingredients

  • 2 ripe bananas

  • 2 flax eggs (2 Tbsp ground flax, 5 tbsp water)

  • 1/2 cup gluten-free flour

  • 2 tbsp almond butter

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1 tsp vanilla extract

  • Handful of chocolate chips

  • Handful of unsweetened coconut shreds


Recipe

  1. Preheat oven to 350°F.

  2. Make flax eggs and set aside for around 5 minutes.

  3. Mash banana in a mixing bowl.

  4. Add in the wet ingredients first and then the dry.

  5. Fold in the chocolate chips and coconut.

  6. Transfer to oiled muffin tray. I like to use silicon muffin tins.

  7. Bake for 16-18 minutes.


Makes 6!
