Banana bread is great but personal banana bread muffins may be even better! I added in a generous handful of chocolate chips and coconut shreds for some extra goodness.

Ingredients
2 ripe bananas
2 flax eggs (2 Tbsp ground flax, 5 tbsp water)
1/2 cup gluten-free flour
2 tbsp almond butter
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 tsp vanilla extract
Handful of chocolate chips
Handful of unsweetened coconut shreds
Recipe
Preheat oven to 350°F.
Make flax eggs and set aside for around 5 minutes.
Mash banana in a mixing bowl.
Add in the wet ingredients first and then the dry.
Fold in the chocolate chips and coconut.
Transfer to oiled muffin tray. I like to use silicon muffin tins.
Bake for 16-18 minutes.
Makes 6!
