Vegan Baked Feta Pasta

This trend has taken over and I just couldn't resist. Personal-sized so you can eat straight from the dish.


I did it and I did not regret it! I see a lot of TikTok/ Instagram trends but this one looked too good to pass up. Who thinks of these?! I know two things for sure; feta is making a comeback and vegan feta is surprisingly good. My local Whole Foods was also out of cherry tomatoes...we all know why.


This is in no way an original recipe, it is straight from the gram! It was fun to make this and watch my boyfriend make the original version. The property of real feta is a little different, but the vegan one definitely did not disappoint.

 

Ingredients

  • 1/2 cup dry pasta of choice ⁣

  • 2 handfuls of cherry tomatoes ⁣

  • 2 garlic⁣ cloves

  • 1/4 block of vegan feta ⁣

  • pinch of oregano⁣

  • pinch of pink salt⁣

  • drizzle of olive oil

  • fresh basil, chopped

Recipe

  1. Preheat oven to 400°F.

  2. Add feta, tomatoes, garlic, oregano, salt and olive oil to a baking dish.⁣

  3. Bake for 15-20 minutes. The feta breaks down before the tomatoes go POP.⁣

  4. While feta bakes, make pasta according to instructions.⁣

  5. Take out of the oven and smash the tomatoes with a fork.⁣

  6. Fold in pasta and top with fresh basil.

  7. Enjoy
