Loaded with chocolate chips and walnuts for a crunch in every bite.
I found the coolest loaf pan and just had to break it in! This is no dry zucchini bread - none of those please! Moist, chewy, crunchy and perfectly sweet. Only the good things. My only suggestion is that you double this recipe so it lasts longer.
I am licking my fingers as I type this. You're going to want to try this one right away. You can omit the walnuts and chocolate chips if you'd like. I think its great to add something in for some contrast in texture.
1 1/2 cup oat flour
1/4 cup quinoa flour
1 cup apple sauce
1/2 cup maple syrup
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
2 tsp coconut oil
1 zucchini grated (~2 cups)
a few handfuls of walnuts
a handful of chocolate chips
Preheat oven to 350°F.
In a mixing bow, combine all the dry ingredients.
Add in the apple sauce, maple syrup and coconut oil.
Grate zucchini and mix it in.
Fold in the walnuts and chocolate chips.
Transfer to a baking dish and top with chopped walnuts.
Bake for 45 minutes.
Let it cool before slicing and then store in fridge.
