Peach Cobbler
A summer favorite with a protein twist.

Cobbler is a summer classic. It is a crowd pleaser. Cobbler can be as simple as just a few ingredients. When you use fruit that is in season, there is no need for any extra sugar. The crumbly topping is where you can get creative. I have used cookie dough and I must say, its mighty delicious. I opted for a twist on the classic oat topping. While there still is oats on top, I blended them with one of my favorite protein bars. This crumble is to die for.


Ingredients
2 peaches
2 shakes cinnamon
A small shake ground ginger
1 1/2 protein bars
1/3 cup quick oats
1 Tbsp coconut oil
Recipe
Chop up peaches in into cubes.
Preheat oven to 350°F.
In a mixing bowl, combine peaches cinnamon and ground ginger.
Let this mix marinate while you make the topping.
In a small food processor or blender, crush up protein bar.
Add oats and coconut oil and pulse to a crumbly texture.
Pour peach mixture into oven-safe dish(es) and top with crumble.
Bake for 25 minutes or until top is golden and filling begins to bubble.
