Chocolate Cherry Bars

Chocolate and cherry are quite the dynamic duo.

A layer of chewy cookie followed by cherry jam and a hardshell chocolate top.

I would recommend doubling or tripling this recipe. These lasted about two days in my fridge. Not because they went bad...because they were too good.


I love discovering new good-for-you cookies. There’s really never a bad time for a cookie. The cherry cookie inspired the rest of this recipe for a triple-layer bar of deliciousness.

 
 

Base


Cherry layer

  • 1/2 cup frozen cherries

  • 1 Tbsp coconut butter

  • 1 Tbsp maple syrup

  • 1 Tbsp oats


Chocolate layer


Recipe

  1. In a food processor, add two cookies. Blend until broken down.

  2. Press into a dish to form a rectangle or square shape.

  3. Make cherry layer by adding all ingredients to a food processor.

  4. Spread cherry layer evenly over base.

  5. Freeze overnight.

  6. Melt chocolate using a double boiler and top with flakey sea salt.

  7. Freeze for 5-10 minutes to set.

  8. Enjoy and store in fridge.
