Chocolate Cherry Bars

Chocolate and cherry are quite the dynamic duo.

A layer of chewy cookie followed by cherry jam and a hardshell chocolate top.
I would recommend doubling or tripling this recipe. These lasted about two days in my fridge. Not because they went bad...because they were too good.
I love discovering new good-for-you cookies. There’s really never a bad time for a cookie. The cherry cookie inspired the rest of this recipe for a triple-layer bar of deliciousness.

Base
Cherry layer
1/2 cup frozen cherries
1 Tbsp coconut butter
1 Tbsp maple syrup
1 Tbsp oats
Chocolate layer
Recipe
In a food processor, add two cookies. Blend until broken down.
Press into a dish to form a rectangle or square shape.
Make cherry layer by adding all ingredients to a food processor.
Spread cherry layer evenly over base.
Freeze overnight.
Melt chocolate using a double boiler and top with flakey sea salt.
Freeze for 5-10 minutes to set.
Enjoy and store in fridge.
