Cinnamon Buckwheat Pancakes

Pancakes for the win. Simple, delicious and heart-shaped.

These aren't the fluffy, sugar-filled buttermilk pancakes we grew up on. Although those were delicious, I think I would be needing a morning nap if I tried having that for breakfast. I am all about a breakfast that tastes good and makes you feel good. After all, breakfast is the meal that sets you up for the rest of the day.

Ingredients
1 cup cinnamon buckwheat groats (use code CFC15 for 15% off first order)
1 tsp vanilla extract
2 Tbsp lemon juice (about half a lemon)
2 tsp baking powder
3/4 cup nut milk
1 tsp sweetener (I used date sugar)
2 tsp freeze dried dragonfruit powder (or any red/pink superfood powder)

Raspberry vanilla drizzle
Raspberries
Strawberries
Recipe
Blend buckwheat to a flour.
In a mixing bowl, combine all of the dry ingredients (except the colored powder).
Add in the liquid and mix well.
Let the batter sit for about 5 minutes to absorb and fluff up.
Divide batter in half (2 bowls). Mix superfood powder into one of the bowls!
Heat a pan or skillet with oil over medium heat.
Make pancakes! I used a heart cookie cutter once they were done.
Blend yogurt and raspberries.
Stack, top and dig in!
