Cinnamon Buckwheat Pancakes

Updated: Feb 17, 2021

Pancakes for the win. Simple, delicious and heart-shaped.

These aren't the fluffy, sugar-filled buttermilk pancakes we grew up on. Although those were delicious, I think I would be needing a morning nap if I tried having that for breakfast. I am all about a breakfast that tastes good and makes you feel good. After all, breakfast is the meal that sets you up for the rest of the day.

Vegan

Part of a balanced breakfast :)

Ingredients

  • 1 cup cinnamon buckwheat groats (use code CFC15 for 15% off first order)

  • 1 tsp vanilla extract

  • 2 Tbsp lemon juice (about half a lemon)

  • 2 tsp baking powder

  • 3/4 cup nut milk

  • 1 tsp sweetener (I used date sugar)

  • 2 tsp freeze dried dragonfruit powder (or any red/pink superfood powder)

Toppings

Recipe

  1. Blend buckwheat to a flour.

  2. In a mixing bowl, combine all of the dry ingredients (except the colored powder).

  3. Add in the liquid and mix well.

  4. Let the batter sit for about 5 minutes to absorb and fluff up.

  5. Divide batter in half (2 bowls). Mix superfood powder into one of the bowls!

  6. Heat a pan or skillet with oil over medium heat.

  7. Make pancakes! I used a heart cookie cutter once they were done.

  8. Blend yogurt and raspberries.

  9. Stack, top and dig in!
